Rice Wine and Honey Salmon

Cooking Time: 7:30 minutes
Ingredients: 1 pouch Rice Expressions Organic Long Grain Rice
2 4 ounce salmon portions
1 tablespoon minced ginger
1 1/2 cup frozen stir fry vegetables
1/4 cup honey
2 tablespoons vegetable oil
2 tablespoons rice wine vinegar
1 tablespoon soy sauce
2 medium sautepans, 1 with lid
1 mixing bowl
Directions:
0:00 Whisk honey, rice wine vinegar, soy sauce, and ginger in a mixing bowl and set aside.
0:30 Heat 1 tablespoon of oil in one sautepan over high heat, once pan is hot, reduce to medium heat and add salmon portions. Cook covered, 3 minutes on each side.
3:30 Cook rice in microwave for 3 minutes.
4:00 Heat 1 tablespoon of oil in another sautepan over high heat. Add vegetables and 1/2 of rice wine honey sauce, stir and cook until done. (about 2 minutes)
6:30 Remove salmon from heat and place on one side of dish and drizzle top with the rest of the rice wine honey sauce.
7:00 Set rice and vegetables alongside of salmon.
7:30 Serve and Enjoy.
